Prawn and Pasta

This is a made up recipie that takes on many forms depending on what I have in the fridge. I should call this "Geri Surprise" but I think everything I cook is a surprise unless I find a recipe. I use mostly prawns. I have even used left over salmon or even canned salmon in place of the prawns - so perhaps I should call it Seafood Pasta. Oh and I improvise on my ingredients.

Vegetables cut up into bite size bits - carrots, celery, sweet peppers, onions, garlic, broccolli, snow peas - just about any vegetable will do a combo of them - use a decent amount depending on the number of people for dinner.

Seafood - and as I said above I use mostly prawns but substitues are encouraged

Pasta - use your favourite

bit of oil - olive or canola or peanut (your choice)
1 cup Plain Balkan or Greek yogurt
1/2 cup sour cream
1/2 cup crumbled feta cheese - more if you like
Herbs and spices to taste
Lemon zest if you have it
a splash of white wine

Method:

In a large serving bowl mix yogurt, sour cream, feta cheese, herbs, spices and zest. Let sit. Start stir frying your vegetables - garlic first, onions next, vegetables in order of how fast they cook. Add the splash of wine. Simmer for a bit then add to the yogurt mixture. Once the noodles are done, drain and add to the yogurt and vegetable mixture. Stir fry the seafood (if using left over or canned salmon just add to mixture) then add to this mixture. Then serve. Mike likes to sprinkle parmesan cheese over this but I don't.

I serve with salad and sometimes a really good bread from the bakery.
