Like I said. We usually grow TONS of Zucchini. I remember one year, Mike's Dad announced proudly that he had planted another row of 10 cucumber plants only to find out that this row was zucchini plants. That year I challenged myself to find and create recipes to use these things up and with the help of a wonderful book given to me by a friend I managed to use up a lot. And don't ever come to visit us in the summer if you don't like zucchini - no one leaves the yard alive without at least one.
Zucchini Apple Pie - I did love making this. We were going to a family potluck at Mike's sister Pam's house - this was many years ago. I promised apple pie but knew I needed to use up yet another humongous zucchini. I found this recipe (since modified) on the web. Long story short I followed the recipe but I did not have enough prepared zucchini so used some that was not steamed translucent. Everyone loved the "apple" pie until Dalton found the unprepped zucchini and oh my goodness you should have heard him - "ehewwwwwww! - SHE put zucchini in the apple pie - ehewwwwwww!" I loved it and Mike's Dad was thrilled. Little did he know there was absolutely NO APPLE in that apple pie.
Zucchini Relish - This is a favourite with my family. I send jars to Whistler and to North Gower. I found this recipe in the August 1993 Canadian Living and have been making variations ever since. One year Mike and I had a "bake off". His Mom had given him a recipe and we each made our batch and did a comparison - no I think mine is best - personal opinion - but in all honesty they were both the same recipe - must be the cook.
Zucchini Frittata - Oh me oh my - I found this amazing recipe on the web - this will be used a lot this summer.
Another year of Zucchini madness (2013) - not only did we get our regular compliment of zucchini's in the garden patch but our Acorn Squash patch turned out to be a cross breed between Acorn Squash and Zucchini's - what to do WHAT TO DO!!!! Well I hunted down zucchini recipies and low and behold a few more are now my favourites.
Crazy Pie - or Lemon Zucchini Pie. I found this on the web - but I did make some modifications to it to suit what I had in my house.
